GINGER CHICKEN
Pressure cooking time: 10 minutes
Other cooking time: 15 minutes Yields: 4-6 servings
Ingredients:
1 half chicken cut into 2 pieces
1 inch piece of fresh ginger, grated
1 clove garlic, crushed
1/4 cup soy sauce
1/4 cup dry sherry
1/4 cup water
1/2 teaspoon salt
1/8 teaspoon pepper
1 green onion, including green
portion, sliced
1/2 lemon, thinly sliced r
Rub chicken with ginger and garlic.
Put soy sauce, sherry and water in cooker. Put trivet in cooker. Place chicken on trivet. Sprinkle salt and pepper. Arrange onion and lemon slices over chicken.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 10 minutes.
Remove cooker from heat. Allow to cool naturally.
Open cooker. Place chicken on serving dish. Discard onion and lemon slices. Serve hot. |
